The BEST vegan pancakes (super easy recipe)

Hello everyone! I wanted to share this delicious vegan pancake recipe with yall. If you're not familiar with vegan food you're probably thinking ''What the hell is that?'' Haha. Well they are a cruelty free version of pancakes. I personally prefer waffles because I hate the taste of pancakes, BUT I FELL IN LOVE WITH THESE. Gotta say that the first time I made them it was trial and error then I adjusted the original recipe! Please remember that the inside texture is a bit more soft than actual pancakes so don't freak out lol. So I hope yall enjoy this please tag me and let me know if you decided to make them :-)

Ingredients:

  • 1 cup of oats 
  • 3/4 of a cup of soy milk or almond milk
  • 2 tablespoons of water
  • 1 small banana
  • 1/2 teaspoon of baking powder
  • 1/2 teaspoon of vanilla extract
  • chia or flax seeds
  • (dark chocolate chips IF you want chocolate chip pancakes)
  • blueberries and strawberries
  • crushed walnuts
  • maple syrup
  • olive oil
Tools:
  • medium pan
  • spatula
  • blender
  1. Pour the soymilk, water, and add banana to the blender and blend
  2. add baking powder and vanilla to blender and blend again
  3. Pre-heat pan on medium heat and lightly add a teaspoon of olive oil (make sure the pan is ''greased'', you don't want too much oil although you might have to add more later if the pan gets too dry)
  4. Pour about 2-3 tablespoons of batter on the pan, add the chia or flax seeds, and wait until you can flip it without the bottom still being ''mushy'', it should be a light brown color
  5. REPEAT step 4 to make more pancakes
  6. Add strawberries, blueberries, walnuts, and syrup on top (I prefer frozen blueberries and heating them 40 secs then adding them) ENJOY!
