The BEST vegan pancakes (super easy recipe)

Ingredients:
- 1 cup of oats
- 3/4 of a cup of soy milk or almond milk
- 2 tablespoons of water
- 1 small banana
- 1/2 teaspoon of baking powder
- 1/2 teaspoon of vanilla extract
- chia or flax seeds
- (dark chocolate chips IF you want chocolate chip pancakes)
- blueberries and strawberries
- crushed walnuts
- maple syrup
- olive oil
Tools:
- medium pan
- spatula
- blender
- Pour the soymilk, water, and add banana to the blender and blend
- add baking powder and vanilla to blender and blend again
- Pre-heat pan on medium heat and lightly add a teaspoon of olive oil (make sure the pan is ''greased'', you don't want too much oil although you might have to add more later if the pan gets too dry)
- Pour about 2-3 tablespoons of batter on the pan, add the chia or flax seeds, and wait until you can flip it without the bottom still being ''mushy'', it should be a light brown color
- REPEAT step 4 to make more pancakes
- Add strawberries, blueberries, walnuts, and syrup on top (I prefer frozen blueberries and heating them 40 secs then adding them) ENJOY!
